Welcome back to Sunday morning and the Old Cookbook Show, friends! In today's episode, we're diving into a recipe from the "Household Cookery Recipes" cookbook, courtesy of the Northern County's Training College of Domestic Science. Join us as we explore the origins and variations of a classic recipe called "Singin' Hinny" (pronunciation mysteries included!). Watch as we attempt this traditional recipe, discussing its regional differences and historical context in relation to Welsh Cakes. Despite a few kitchen mishaps, we're excited to share our tasting experience and thoughts on this unique dish. 1 lb. Flour.
1 pinch Salt.
4 ozs. Lard.
4 ozs. Butter.
1 teaspn. Baking Powder.
4 ozs. Lard.
6 ozs. Currants.
Sufficient Milk to make a stiff paste.
Rub the lard and butter into the flour, add salt, baking powder and currants.
Mix to a stiff paste with milk.
Roll into one large round cake about finch thick, place on a girdle and cook slowly until the first side is well browned; slip a cake turner under and turn onto the other side and cook it also till browned.
The girdle usually requires frequent turning round.
After the second side is cooked the cake should be again turned over and allowed to cook for a further few minutes.
When cooked, place the cake on pastry board, cut into squares, split and well butter. Serve hot.
Instead of making one large cake it can be cut into rounds with a cutter, about 2 ½ to 3 inches
