Ingredients for Dhaba Mutton Curry:

- Mutton, curry cut pieces- 500 gms

To boil the mutton:
- Turmeric Powder- 1/2 tsp
- Salt- 1 tsp
- Water- 150 ml
- Refined Oil- 1 tbsp

Whole Spices:
- Green Cardamom- 3
- Cinnamon- 2 small pieces
- Cloves- 3
- Black Cardamoms, crushed- 2
- Black Peppercorns, crushed- 6
- Bay Leaves- 2

For the Masala Paste:
- Red tomatoes, quartered- 2 medium (150 gms)
- Kashmiri Chilli Powder- 2.5 tsp
- Coriander Powder- 2 tsp
- Cumin Powder- 1 tsp
- Fennel Powder- 3/4 tsp
- Garam Masala Powder- 1/2 tsp

Other Ingredients:
- Onions, grated- 2 small (total 100 gms)
- Green Chillies, chopped- 2
- Ginger Garlic paste- 2 tsp
- Coriander leaves, chopped- 3 tbsp
- Salt to season- 1/4 tsp
- Refined Oil- 3 tbsp

Preparation:

- To boil the mutton, take a pressure cooker and add the mutton and all the other ingredients mentioned. Pressure cook till 3-4 whistles.
- To pressure cook, keep it on high heat till the 1st whistle and then reduce the heat to low for the balance whistles. Wait for the pressure to release and strain the stock and keep it aside just before adding it to the curry.
- In case you don’t have pressure cooker, cook covered on low heat in a pan for 45-60 mins till the meat is tender.
- To make the Masala Paste, quarter the tomatoes and blend it in a grinder along with all the other spice powders mentioned. You may add 2-3 tbsp water to blend everything.
- Crush the black cardamoms and peppercorns.
- Grate the onions and chop the green chillies & coriander leaves.

Process:

- Heat oil in a pan and add the whole spices. Once it splutters, add the grated onions.
- Mix and fry it on medium heat for around 5-6 mins till the colour is light brown.
- Add the chopped green chillies and give a stir for around 1 min.
- Add the ginger garlic paste, give a mix and continue frying it on low heat for 2 mins.
- Now add the masala paste and salt to season (1/4 tsp), give a mix and fry it on medium heat for 4-5 mins till oil separates.
- Now add the boiled mutton pieces without the stock and mix & fry it on medium heat fo 3-4 mins.
- Now add the mutton stock set aside (should be around 200 ml, add balance water if it’s less).
- Mix and cover & cook on low heat for around 12 mins.
- Garnish with chopped coriander leaves.
