-5 grams active dry yeast
-4 grams kosher salt
-15 grams Honey

(Sauce)
-1 qt peeled whole san marzano toms
-1/2 minced yellow onion
-5-8 cloves minced garlic
-1 cup evoo
-1/4 C Mediterranean Oregano
-2 tbsp chili flake
-red wine vinegar to taste
-salt to taste
-pepper to taste

(Sour garlic salt)
-2 tbsp garlic powder
-1 tbsp citric acid
-1/2 cup kosher salt
