Khoai deo (Quang Binh Province, Vietnam) set an Asian Record value (according to the Asian Records Criterion for Cuisine and Specialty). Khoai deo is derived from red sweet potatoes cultivated in sandy soil, and resembles a ginseng root. After harvesting, they are washed, boiled, and cut into thin slices, and then sun-dried about 10 - 12 times until the color turns dark yellowish brown. Khoai deo must be dry but chewy like malt sugar, with a color similar to honey and a sweet taste like rock sugar.
