During this time of COVID-19 pandemic all my meals are "for one." I haven't invited anyone to dinner in months. Sometimes I want something special; so I came up with this simple recipe for Shrimp Scampi. It's easy and quick, but the result is a delicious plate of food. (There is also an important tip for working with tail-on shrimp.) And, yes, my plating skills are awful. I'm working on that.
