Mexican Pizza Is A LIE

Mexican pizza quesadilla

Ingredients:
(Flour tortillas)
-340g Flour
-175G warm water
-65G clarified butter or lard
-salt

(Queso Fundido)
-8oz shred cheddar cheese
-2 cups milk
-pinch salt
-.2 oz sodium citrate
-.2 oz vinegar
blend
-1 cup roasted chopped poblano
-1 cup cooked pork chorizo

(Beef knuckle)
marinade
-3 chile guajillo seeded and reconstituted
-2 tbsp morita chipotle
-1 tbsp orange peel
-1 tbsp black pepper
-2 tbsp Mexican oregano
-2 tsp cumin
-2 clove
-2 bay leaf
-1 yellow onion
-5 cloves garlic
-1 cup rice wine vinegar
-1/2 cup rice oil or other neutral oil
-3 tbsp kosher salt
Braise
-2 lbs beef knife sliced
-1 quart beef stock or Chix stock
-sauce
-pressure cook for 1 hour or braise in pot til fork tender.

(Pickled red onion)
-2 whole red onions sliced thin
(Pickle liquid)
-2 cups rice wine vinegar
-1 cup H2O
-1 tsp toasted cumin
-1 tbsp jalapeño powder or fresh
-orange peel
-1 tbsp red chili flake
-juice of an orange
-salt to taste

(For the quesadilla)
-flour tortilla
-Queso Fundido
-braised beef
-cilantro
-pickled onion
-jalapeño
-shredded cheddar
-avocado
