This pasta dish benefits from the flavors of spinach, cheese, and a delicate balsamella (béchamel) sauce. I wanted to make cannelloni again, but rather than using a tomato-based red sauce I wanted to use a balsamella white sauce this time. The flavors go well together. Although this is a complicated dish to make, it is well worth the effort.
