After restoring the rusty cast iron skillet, you can start the seasoning process. Below is a great article by Jake Smith

"Cast iron skillets are unusual. They’re a kitchen staple, but they’re also often misused. Unlike basically every other kitchen implement (most of which can pop right into the dishwasher or sink), cast iron requires TLC and attention to survive. But with the right preparation, you can work wonders with a skillet, from curry to chicken to cornbread.
Cast iron cookware needs seasoning, or a baked-on layer of oil, before you can use it. No, you don’t add spices—this seasoning is more like a polish that keeps your skillet from rusting or sticking to food.
How to season cast iron the right way after restoring it from rust.
Please follow these steps, with better detailed explanations below:

Preheat your oven to 350°F.
Wash your skillet with soap and water.
Dry it completely.
Coat it in oil or shortening.
Place the skillet upside down on your oven’s middle rack.
Allow it to cool before removing it.
Repeat the process up to three times.
Before anything, preheat your oven to 350 to 375°F. Start by washing your cast iron skillet with warm, soapy water, scrubbing with a sponge where needed. It has to be completely dry. Otherwise, you could end up with a rusty pan.
Coat it with oil or shortening you plan to use. Make sure you coat the entire pan, not just the interior, in a thin layer of oil.
Once your oven has warmed, place the skillet upside down on the middle rack. The oil or shortening drips, so put a pan or foil below the skillet to catch anything. Let the pan bake for about an hour, then turn off the heat and let it cool before taking it out."
