In good times or bad, Bengaluru loves its biryani and the one biryani that is perhaps most favoured here is the Andhra biryani. A biryani that’s nuanced in its depth of flavour and finds its roots in the Nellore district of Andhra Pradesh. In this episode of Gourmet On The Road, I catch the making of this traditional biryani from start to finish at the newest outpost of Bengaluru’s largest chain of Andhra restaurants, Nandhana Palace. In doing so, I chat with second generation owner, Shweta Ravi, and learn of her family’s commitment to culinary traditions over three decades, and also savour the many creations of the kitchens here that are now synonymous with Andhra cuisine.
