coconut oil, vg butter for the pan
1 banana
½ cup (50g) rolled oats
pinch of salt
dash of cinnamon
optional: 1-2 tsp sugar or agave

80ml (1⁄3 cup) non-dairy milk
1 tsp apple cider vinegar
3 tbsp vg yogurt or applesauce
1⁄2 tsp vanilla extract, optional
85g flour (⅔ cup plus 1 tsp)
21⁄2 tsp baking powder
pinch of salt
1 - 2 tbsp sugar
1-2 tsp coconut oil, sunflower seed or vg butter for frying*

1-2 bananas
serve w extra yogurt, berries, chocolate spread etc

*a light grease yields the best result, make sure to use non-stick!

for the chickpea egg:

⅓ cup (45g) chickpea flour
generous pinch of salt
½ tsp baking powder
optional: dash of curry powder, paprika, black pepper
⅓ cup plus 2 tbsp (100ml) non dairy milk
2 tsp apple cider vinegar
1-2 tsp oil for frying

1 large tortilla (the size of your pan)
tomato slices
avocado slices
1-2 handfuls spinach
1 handful vegan cheese
sesame seeds, vg chili mayo

#4 “Tiramisu” Baked Oats 5:56

2 cups rolled oats (180g)
50g protein powder (½ cup)
¼ tsp salt
1 tsp baking powder
2 bananas, mashed
375ml non dairy milk (1 ½ cups)
75 chocolate chips (⅓ cup plus 1-2 tbsp)

250ml - 375g vanilla or plain yogurt, more if needed (1 cup - 1 ½ cups)
1-2 tsp unsweetened cocoa powder
additional agave syrup for serving

~ ½ can chickpeas (200g)
1-2 drizzles of olive oil
1 tsp white wine vinegar
1 handful of baby carroty, halved or quartered
generous pinch of salt, pepper

400g unsweetened soy yogurt (14oz)
2-3 tbsp fresh dill, minced
1 clove garlic, crushed
1 drizzle olive oil
1 tsp white wine vinegar
¼ tsp salt or to taste
pepper to taste

serve w: fresh bread, olives, the roasted veg/beans, sesame seeds, cumin, more spices, micro greens…

#6 Gochujang Fried Rice Bowl w tofu 9:50

1 block firm tofu (200g = 7oz)
1 tbsp cornstarch or flour
generous pinch of salt
1 - 2 tsp veg oil
2 handfuls fresh baby spinach

2 servings cooked rice, preferably sushi rice (i had boiled ½ cup - ⅔ cup dry rice)

for the sauce:
½ tbsp gochujang (adjust to taste!)
2-3 tbsp soy sauce
1 tbsp olive oil or roasted sesame oil
1 tsp agave or sugar or rice syrup
1-2 tsp sesame seeds
1 tbsp white wine vinegar
¼ cup water (60ml)
salt, pepper to taste (taste test after adding the rice)
